When the group of 15 UT students arrived at their destination, an hour outside of Quito, Ecuador, they were greeted in Spanish and the native Kichewa, and “were immediately overwhelmed by the reality that we would be spending the next two weeks in one of the most naturally beautiful places in the world,” said Jessie Beckett ’17, a psychology major.

“Everywhere we looked, we saw green.”

As part of a UT international alternative break hosted by the PEACE Volunteer Center, the students trekked through the Amazon learning about the ecosystem and the conservation efforts crucial for survival. They used machetes, axes and hoes to help with traditional farming and replanting guayusa trees. And they absorbed as much as they could.

“All of us went into the Amazon rainforest with open minds and left with them completely filled with memories,” Beckett said. “We hiked for hours, we played with children, we drank Guayusa (their native spiritual tea) and fell in love with the Amazon.”

As soon as the spring semester ended, a group of UT students headed to Maryville, TN, where they spent about two weeks in the mountains focusing on environmental preservation and cultural education by working with the Eastern Band of the Cherokee Nation.

The University of Tampa Board of Counselors celebrated a tremendously successful year, raising more than $55,000 through gifts given directly by its members and through fundraising events held during the past academic year.

The clinking of glasses and din of diners chatting over their Cuban sandwiches provided the backdrop for Kacy Tillman’s students as they snaked through the Columbia Restaurant’s colorful tile-covered walls, learning of the Ybor City establishment’s more than 100-year-old history from one of its family leaders, Cesar Gonzmart Jr.

“The old tiles on the floor come from Cuba, the tiles on the wall from Spain — everything on the walls has history and meaning,” Gonzmart said.

From the lead-glass windows to the wrought iron doorframes, the restaurant’s beauty wasn’t lost on the ogling students.

“I want to live in this restaurant,” said Mia Meo ’16, an education major from New Jersey, as she climbed the stairs to the second floor dining rooms and overlooking balconies.
